It is true the last few months have been challenging, but it’s an opportunity to find silver linings too. With more time at home many of us are trying new recipes or tapping in to tried and true favorites. Cooking and baking (and cocktail making) are wonderful outlets for all! There’s no denying the soul-soothing nature of the aroma of freshly baked bread, or straight-from-the-oven chocolate chip cookies.
Our team has gathered some of their cherished recipes to share that we bet become your favorites too. My favorites are from The Barefoot Contessa: Tequila Lime Chicken and Roasted Tomatoes. Each is so easy and so flavorful. Also find at the end of this blog my new favorite cocktail – a perfect accompaniment to any of the dishes listed here. Enjoy!
Mexican Slow Cooker Pulled Pork Carnitas. This is a great combo of juicy and crispy pork, seasoned to perfection and so quick and easy to make. Serve with tortillas, cilantro, salsa, and cheese for a simple and satisfying lunch or dinner. Lauren Woolsey
Creamy Tuscan Chicken: This has become a new family favorite in my house. I recommend serving with rice, butter noodles, or simply some crusty bread so soak up the amazingly delicious sauce. Emily Forschler
Barefoot Contessa’s Homemade Granola: This is delicious and perfect for gift giving. It’s full of yummy ingredients like cashews and dried figs. Make in batches and deliver in ribbon bedecked mason jars. Sarah Kellar
Jalapeno Turkey Burger: Jalapeno and shallot spice up what would otherwise be just another turkey burger. Jill Montaquilla
Easy Wonton Soup: This recipe, which is my family’s current favorite, is remarkably easy. I add thawed frozen shrimp to give it a bit more oomph. Ginny Peterson
Homemade Lavash Pizza: This is fun, easy and fast. I’ve tried various versions since making the original. My favorite and the easiest by far is to use traditional red sauce, mozzarella cheese, pepperoni, Italian sausage, and pineapple. Delish! Jen Ries
Tollhouse Chocolate Chip Cookies: You can’t beat the original. I double the vanilla and add extra chips (milk and semi-sweet.) Ann Marie Quinn
And here’s the promised Lone Stargarita that has become my tried and true cocktail recipe:
- 1.5 oz. Blanco tequila
- 1.5 oz. Triple Sec
- 1 oz. Lime juice
- 1 oz. Simple syrup
In a building glass, add ingredients and top with ice. Shake 6-8 times; pour into a Mason jar and garnish with a lime wheel.
